world's most expensive spice

saffron flowers and their separated filaments in an iranian factory highlight the country's 3000 year old heritage in saffron cultivation.the country produces 69% of the world's total saffron output.the spice is extracted from flowers of the saffron crocus .the flowers stigma and stems are dried and used in cooking sa a seasoning and colouring agent.characterised by a bitter taste,it contains a carotenoid dye,crocin,that gives food a rich golden -yellow hue.
