THE KING OF INDIAN SPICES-PEPPER

The King of Spices in Kerala , southern beautiful state of  India.Pepper has a good flouring, hot and biting taste. It’s a warming spice. It was very popular and important spice in the world in ancient days. This aromatic spice with an exotic flavor and a pungent odor is cultivated in hills  region on the Western Coast of South India.

India occupied a supreme position in the production of pepper. Malabar Garbled’ and `Tellichery Extra bold’ are the two popular super quality varieties which are grown in the monsoon forests of the Malabar Coast of Kerala.

Chinese used pepper powder to treat malaria, cholera and dysentery. Centuries before Arabians used both black and white pepper for treatment of stomach aches, digestive problems and fever. The word pepper is derived from the Sanskrit word pippali, which is only one of the many names of pepper in Sanskrit language and that was transferred via Greek péperi and Latin piper. India also offers green pepper in several processed forms.


CARDAMOM-THE QUEEN OF INDIAN SPICES

The queen of Indian Spices Cardamom is a dried fruit of a herbaceous perennial plant. It is grown mainly in South Indian states like Kerala, Tamilnadu and Karnataka. It is grown on the slopes of the Western Ghats which contain aroma rich in eucalypts and lemon flavor. The fruit is naturally covered by a capsule with many seeds inside which are used as spice in food & drinks.

Cardamom belongs to Ginger family and is one of the precious and most ancient cultivated spices in the world like saffron and vanilla. Thousands of years ago, Cardamom became very popular and played important role in cultures of Arabia , Africa and Europe. Alleppey Green Extra Bold (AGEB), Alleppey Green Bold (AGB) and Alleppey Green Superior (AGS) are the well known grades of Indian cardamom in global markets.

India is a traditional exporter of cardamom to the Middle East countries, certain Arabian countries and some of African countries, where it used for preparation of 'Gahwa' - a strong cardamom - coffee concoction, which is a part of their tradition. Indian cardamom also contributes a major role in traditional cultural life of Russia and Japan.


Origin & Uses

Farming of cardamom is encircled in the Ever Green forests of Western Ghats of South India. The growing regions of South India lie within 8-30 degree N latitudes and 75-78 degree longitudes.

Cardamom oil is a precious ingredient in food preparations, perfumery, medicines and beverages. Cardamom oil is used for enriching the flavoring in processed foods, cordials, liquors, toiletry items and Ayurvedic medicines.Cardamom is also used as a flavoring agent in whole and ground form in Arbian countries.
In Asia, it is used for preparation of various dishes both traditional and modern. In Scandinavian countries it is used in baked items and confectionaries. In Europe and North America it is used as an ingredient in curry powder and in some sausage products

India produces about 3 million tones of various kinds of spices and also that much of herbs annually. In ancient days this land has emerged as the eccentric of the spices business and later many great historic battles took place to capture the spices business as they were treated as a precious substance like gold & jewels.Spices can be defined as "a natural organic flavored aromatic content of vegetable origin, obtained from tropical plants and tress in the form of roots, skins, seeds, flowers, leaves, sap etc. In ancient times itself , spices are playing very significant role in medicines preparation and act as flavoured agent, preservatives and perfumes.
Spices and herbs not only add flavor to our food but also play a significant role in our healthy life style. They are enriched with Iron, Calcium, Vitamin B, Vitamin C, Carotene, other antioxidants etc. Example Parsley is used in Cancer prevention due to its antioxidant property. Similarly, spicy foods are rich in various minerals, vitamins, amino acids, etc. Spice farming is extensively done in the whole India. Organic farming eliminates the contamination of soil and water and helps to conserve water and soil on agricultural lands. Organic cropping is emerging passionately in the agriculture sectors of many countries. In Austria and Switzerland, organic agriculture became very popular, while in USA, France, Japan and Singapore it played a major role in the growth of the countries.
